Breakfast for Royalty
I hope everyone has been able to catch a little bit of the royal wedding. I did not see it in live time but I have been watching highlights all day. I must say that it was the absolute perfect wedding! Kate and Will looked so elegant and happy. I love Kate’s perma-smile! She is a gorgeous bride.
It’s great to see everyone so preoccupied with joy and love. The excitement makes me dream of my own fairy-tale wedding. It also makes me want to travel to London and get my own fascinator!
I present to you a breakfast fit for Royalty. I’m not kidding when I say that I would love serving this to Dutchess Katherine!
It is a combination of quinoa, toasted coconut, and mango. I love quinoa. I think this crunchy little seed makes a perfect breakfast but that’s not in your taste it also makes a lovely lunch.
Quinoa with Coconut, Mango, and Strawberries

Serves 2
1/2 cup uncooked quinoa
1 cup water
Pinch salt
3 tbsp shredded coconut
2 tbsp coarsely chopped almonds
Cinnamon
2 tbsp applesauce
1/4 cup chopped strawberries (about 2)
1/2-3/4 cup chopped mango (about 1/2 mango)
Maple syrup (optional)
Combine quinoa, water, and salt. Bring water to a boil and then cook for 15 minutes, until all the water is absorbed. Remove quinoa from heat and let cool slightly.
Preheat oven to 375 degrees F. Mix together coconut, almonds, and cinnamon on a baking pan. Toast coconut for about three minutes until browned and fragnant, the almonds should also be lightly roasted.
Divide quinoa into two bowls. Stir one tablespoon of apple sauce into each. Top each equally with strawberries and mangos.
If desired add some maple syrup and/or soymilk on top.
Mine was when one of the clergy members did cartwheels down the Church aisle after the couple had left

Ahhh, this looks delicious! Strawberries and mango, to remind me that…summer isn't too far away. Right?! Looking out my window I wouldn't know that, but I've just gotta hope sunshine and warmth isn't too far off 😉

I'm a huge fan of quinoa for breakfast! I love to make it with a bit of maple syrup, toasted pecans, and some blueberries/strawberries. Love your kinda tropical version too!
