Zesty Orange Chocolate Chip Muffins

There is just something about orange zest in a baked good that makes it so special. It reminds me of brunch, mimosas, Christmas, and after school snacks. Yet it is such a simple and easy thing to add to a recipe! Simple effort for elegant taste. Whip them up and serve them to everyone!

The chocolate chips in these make it really special. I love how the chocolate melts into the batter.

 

Tips for an excellent muffin:

– don’t overmix the batter to avoid tough muffins (literally for the muffins but can also be applied to humans)

– use the best possible ingredients for extra special muffins

– add your own spin by switching out mix-ins for nuts, seeds, white chocolate chips etc.

– enjoy muffins always!

Zesty Orange Chocolate Chip Muffins

Ingredients

  • 2 cups flour

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1/2 cup chocolate chips

  • 2 eggs

  • 1/2 cup sugar

  • 1 cup milk of choice

  • Zest of 1 orange

  • 1/4 cup melted coconut oil or other oil

  • Juice of 1 orange

  • 1/2 tsp vanilla extract

Directions

  • Preheat oven to 400C. Combine flour, baking powder, salt, and chocolate chips in a large mixing bowl. Make a well in the center

  • In another bowl, combine eggs, sugar, milk, orange zest, orange juice, vegetable oil, and vanilla extract

  • Stir wet ingredients into dry, being careful not to overmix. Some lumps are ok

  • Grease and/or line a muffin tin and then scoop about 1/4 cup of batter into each muffin cup. Bake for 16-20 minutes until golden on top and a toothpick comes out clean. Cool and serve!
