Zesty Orange Chocolate Chip Muffins
There is just something about orange zest in a baked good that makes it so special. It reminds me of brunch, mimosas, Christmas, and after school snacks. Yet it is such a simple and easy thing to add to a recipe! Simple effort for elegant taste. Whip them up and serve them to everyone!
The chocolate chips in these make it really special. I love how the chocolate melts into the batter.
Tips for an excellent muffin:
– don’t overmix the batter to avoid tough muffins (literally for the muffins but can also be applied to humans)
– use the best possible ingredients for extra special muffins
– add your own spin by switching out mix-ins for nuts, seeds, white chocolate chips etc.
– enjoy muffins always!
Zesty Orange Chocolate Chip Muffins

2 cups flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup chocolate chips
2 eggs
1/2 cup sugar
1 cup milk of choice
Zest of 1 orange
1/4 cup melted coconut oil or other oil
Juice of 1 orange
1/2 tsp vanilla extract
Directions
Preheat oven to 400C. Combine flour, baking powder, salt, and chocolate chips in a large mixing bowl. Make a well in the center
In another bowl, combine eggs, sugar, milk, orange zest, orange juice, vegetable oil, and vanilla extract
Stir wet ingredients into dry, being careful not to overmix. Some lumps are ok
Grease and/or line a muffin tin and then scoop about 1/4 cup of batter into each muffin cup. Bake for 16-20 minutes until golden on top and a toothpick comes out clean. Cool and serve!
