Matcha Raspberry Citrus Cake
This special matcha cake is to die for! Everything goes perfectly together to create this anytime cake. It is great for a birthday, special event, or just to welcome some great weather in the spring! The colors would also make it excellent for the Christmas season. The cake base is simple yet tasty. You can add as much matcha as you like depending on preference and the quality of your matcha. I used about 5 tbsp but less will suffice if you have a really good matcha… or more if you really want some matcha flavor! If you end up loving the simplicity of this cake like me and want to…

Lemon Poppy Seed Cake with Blueberry Filling (vegan option)
Hope everyone is having a lovely summer so far! I made this amazing and beautiful 4 tiered cake for my birthday this month! I think this may be the first time I made a 4-tier cake so it is very special to me! This cake is showstopping with it’s high layers and colorful cake and fillings! It will be great for a special occasion or nice afternoon tea. It is also surprisingly easy to make if you have a little bit of knowledge in baking. My suggestion would be to make the blueberry jam the night before then the cake the nest day. You could make the frosting on either…

Matcha Elderflower Loaf Cake (gluten free, vegan)
Hey guys! I hope you’re doing well. It’s almost spring time! I’m so excited that days are getting longer and the weather is getting warmer. Where I live we still get snow sometimes but I’ve been able to go on some bike rides already! I know there’s not much to do in this time of physical distancing so going out for some fresh air has been a priority for me. Just make sure you maintain distance from others and if you touch anything to wash your hands and clean your clothes. This new cake recipe is perfect for spring! It’s floral, energizing, and sweet! I used a gluten free flour…

Healthy Ancient Roman Cheesecake
Yes this recipe is from Christmas don’t judge This cheesecake is not only healthy but historic! It is based off an ancient Roman cake called Savillum! I based the recipe from this one so check out that link for more history of the cake! It is made with ingredients that you would have found way back in ancient Rome. This includes cottage cheese, honey, and poppy seeds. You may use ricotta instead of cottage cheese. I think this would be more smooth with ricotta but also ricotta is way more expensive! I thought it was still amazing and smooth with cottage cheese. I made this for a Saturnalia party and the…

Lavender Lemon Loaf Cake (vegan)
Last month I went to Seattle! This was my first time in the city and I had a blast! I was swing dancing all night and exploring the city during the day. I went to the Pike Place Market and fell in love with the flowers there. I also went to the best thrift stores in the world (like seriously Seattle has some good stuff) One of my favorite things about the city though was the lavender just growing everywhere! There was lavender growing by the streets in the middle of city and big lavender plants planted by walkways. Lavender was growing like a weed! I would often pick some…

Cream Cheese Apple Coffee Cake
Man guys this cake is sooo good! I imagine that it would be perfect for breakfast on Christmas Day but you can have it any time of year! I got the inspiration for this cake when I was shopping at costco and saw a cream cheese apple coffee cake there. I never tried it so I can’t say how it compares but I don’t know if I need to now because of how delicious this one is! This apple coffee cake is tender with a surprise layer of cream cheese and delicious streusel topping. My favorite part is the streusel! If you want a show-stopping treat for breakfast, dessert, or…

Summer Squash Bread with Chocolate Chips
Our garden has produced a lot of huge veggies this year including yellow squash! We have more than we know what to do with so I decided to get creative with baking. I got to thinking that maybe I could make a sweet bread with some of the squash since you can make things with pumpkin or zucchini so why not squash? Don’t get scared off because there’s squash in here. I promise you that it will almost just like zucchini bread except a little more fun! This bread tastes so good fresh out of the oven. You can eat leftovers cold or heat them up with a slather of…

Strawberry Grapefruit Ricotta Cake
This cake is soooo good! I don’t even know what else to tell you. Just believe me when I say it’s amazing! This cake is so soft and fluffy. It practically melts in your mouth which is perfectly balanced by the sweet fruit. Did you know that ricotta is one of the healthiest cheeses?! Ricotta is full of calcium, zinc, and vitamin A. It also tends to have less calories and fat than most other cheeses (especially if you use skim or low fat ricotta. However, if you what to make this a little healthier you can use cottage cheese. I haven’t tried this so I can’t tell you how…

Lemon Poppy Seed Loaf (vegan)
Probably one of my favorite combos is lemon poppy seed! I wrote in another post here about my long time love of lemon and poppy seed.Check out the recipe for Orange Vanilla Poppy Seed Muffins! There’s just something so wonderful, fresh, and crunchy about this combo that is to die for! This loaf is made a little healthier with apple sauce, coconut sugar, and spelt flower. I used lilac sugar in these. You can make it by putting some clean and dry lilac flowers in a jar of sugar and then letting it sit for a few days. It has a wonderful floral scent and aroma perfect for baked goods…
