Lingonberry Elderflower Sponge Cake
A few weeks ago I was at Ikea! I bought plants, candles, and of course food! It was close to Valentine’s Day and I was inspired to use my heart shaped cake pan that I bought last time I was at Ikea. I decided to make a sponge cake with elderflower concentrate and lingonberry jam. The results were amazing! I absolutely love lingonberries and really must get the jam more often! This blueberry coffee cake is moist and full of cinnamon flavor which is perfectly accompanied by juicy blueberries! It has a crumbly and buttery topping. This is the best coffee cake I’ve ever made! What do you get when you put maple and apple together… Mapple Cake! This cake recipe is adapted from one of my favorite bloggers! Her name is Joy and she runs Joy the Baker. I don’t know about you but I simply adore lavender! For one I love the purple color but I also like the calming effects it has. I often sprinkle some lavender essential oils on my bed to help me sleep at night.
