Dark Velvet Waffles

A few days ago on a walk I found this cute little birdie who couldn’t fly.

Being who I am, I couldn’t just leave him there so I brought home. I made him a small space where I could hopefully nurse him back to health. He eventually began eating and drinking and looked like he was getting a lot better. But unfortunately a few hours later he got worse and I am sad to say that he did not make it.

Poor little birdie. I hope you’re happy where you are now.

I posted this recipe as a guest post on Sweetness of Life a while ago. I love these waffles so much so I decided to post them here as well in case you missed them. Enjoy!

Dark Velvet Waffles
Makes 1 waffle
ยฝ cup whole wheat flour*
2 1/2 tbsp cocoa powder
1 tsp baking powder
Pinch baking soda
ยผ tsp cinnamon
Pinch salt
ยฝ cup soy milk
2 tbsp yogurt, soy yogurt, or apple sauce
1 tbsp coconut oil
2 tbsp maple syrup
ยฝ tsp vanilla
Preheat your waffle maker.
In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, cinnamon, and salt.
Form a well in the center of your dry ingredients.
In another small bowl, whisk together soy milk, yogurt, coconut oil, maple syrup, and vanilla.
Pour your wet ingredients into the well and combine with a whisk until just blended.
Pour waffle batter into waffle maker and cook until done.
*my favourite flour mix for gluten free pancakes/waffles is sorghum and rice flour

I topped my waffles with peanuts, peanut butter, coconut oil, maple syrup, raspberries, and nectarines!
Yup, I love toppings!
