Gluten Free Date Squares with Lime and Cinnamon

It appears that Spring has finally arrived here… and just in time for Summer!

Here is one of the crab apple trees near my home. My favorite time of year is when they bloom. I can’t wait to get some yummy crab apples.


I would have taken more photos but I was getting yelled at by this lovely lady. I think she has a nest somewhere.

I made these date squares, date squares are cool.
Does any one watch Doctor Who? I thought that the final episode was great!

These are really good. They are not your average date squares because they are spiked with lime and cinnamon. It may sound strange but I think that they are the best squares I have ever made!

Date Squares with Lime and Cinnamon
Adapted from Gems of Gluten-Free Baking

3/4 cup chopped dates
1/3 cup water
Juice from one small lime
Zest of one small lime
1/4 cup rice flour*
2 tbsp sorghum flour*
2 tbsp chickpea flour*
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp guar gum
Pinch salt
1/4 tsp cinnamon
1/2 cup brown sugar
1/3 cup butter
1 cup gluten free oats

In a small sauce pan combine dates, lime juice, and lime zest and cook over med-low heat until blended and cooked down. Cool
Heat a oven to 325 and prepare an 8 by 8 inch dish
In a mixing bowl combine flours, baking powder, baking soda, guar gum, salt, cinnamon, and brown sugar. With a pastry blender or two knives, cut butter into mixture until crumbly. Mix in oats
Press 1 1/4 cups of the oat mixture into the pan very firmly. Spread date mixture on top and then lightly press the rest of the oat mixture on top of the dates
Bake 45-50 minutes until golden brown around the edges and lightly golden in the center
Cool completely and then cut into squares
*You could of course use 1/2 cup of any gluten free flour(s) you want

    Thank you for the recipe. I used to make these with my sister when we were kids and we absolutely loved them! I was looking for a good date bar recipe and decided to try yours with a few modifications. I substituted a little stevia for the brown sugar to make it sugar free and coconut butter and applesauce for the butter to make it dairy free and lower fat. They are delicious!
