Chocolate Agave Bran Cookies

These cookies are the best I’ve ever had! I think I have made at least four batches of these in just a month!
And that’s saying something considering I hardly ever make the same recipe twice.

Not only are they vegan but they are also sugar free and have a good dose of extra fiber in them. Did I mention they are delicious as well?

This cookie recipe came out of necessity. I was going to remake the recipe for the Chocolate Agave Trail Mixers from Vegan Cookies Invade Your Cookie Jar but I was all out of whole wheat flour. I didn’t want to use just white flour and I had some wheat bran sitting in cupboard so I decided to try using it. To my delight they turned out awesome!

Chocolate Agave Bran Cookies
Adapted from Vegan Cookies Invade your Cookie Jar

1/2 non-dairy milk
1 tbsp ground flax
2/3 cup canola oil
3/4 cup agave
1 tsp vanilla extract
1 1/4 cup flour
3/4 cup wheat bran
1/2 cup cocoa
3/4 tsp baking soda
1/4 tsp salt
1 1/2 cup add-ins (ex. dried fruit, chocolate chips, coconut, nuts, seeds)*
1. Preheat oven to 325
2. Whisk together non-dairy milk, flax, agave, extracts, and oil for about 2 min
3. Sift in flour, wheat bran,  cocoa powder , baking soda, and salt
4. Mix dough to form a soft ball
5. Fold in in add-ins
6. Shape dough into 2 tbsp round balls and drop onto baking sheet
7. Bake 12-14 min until firm
*For the cookies pictured here my add-ins were: dried cherries, carob chips, sunflower seeds, shredded coconut, and flax seeds
