A Bake Sale and Coconut Hot Chocolate
Before my post today I want to say how sad I am about the earthquake in Japan. About a year and a half ago I went to Japan for three months as an exchange student. I have not been able to contact my host family but luckily they live in a part of Japan that was not affected.
I love Japan so my heart has been broken due to this tragedy. All my prayers go out to Japan and those affected by this disaster.
On a lighter note, this week I participated in my first bake sale! I was so excited. I love bake sales. Nearly every day there is one somewhere at my university. I never was asked to participate in one until a couple weeks ago. Of course I immediately said I would help out.

I decided to make chocolate whoopie pies with vanilla butter cream from Whoopie Pies: Dozens of Mix ’em, Match ’em, Eat ’em Up Recipes. This is a great recipe book. It gives you filling and cookie recipes to choose from so that you can customize your own whoopie pies! There are also several recipes for gluten and vegan pies so everyone can enjoy them.

Whoopie pies are a wonderful creation. They are basically two soft cake-like cookies sandwich with a sweet creamy filling. Just like cakes you can hold in your hands!

The response from my whoopie pies at the bake sale was great! I sold every last one. One person even bought two.

To go along with the whoopie pies I saved for myself I made coconut hot chocolate!
Coconut Hot Cocoa
1/3 cup coconut milk
1/3 cup almond milk
1 tbsp cocoa powder
1/2-1 tbsp maple syrup
Cinnamon
Combine all ingredients in a saucepan and whisk vigorously until everything is combined
Bring to a boil and simmer for a bit while whisking
Carefully taste test your cocoa and adjust accordingly
Remove from heat and pour into mugs
Drink up!
Another great addition is a spoonful of natural peanut butter. It makes it even creamier! And you know I love peanut butter.

Your whoopie pies are wonderful! I think I had my first one last week (it was two chocolate chip cookies with some kind of creamy filling between them, does that count?) and it.was.amazing. I'm practically salivating just thinking about it! Come cook for me? 😉

yum!! I have got to be the only person on the planet who has never tried a whoopie pie! I will have to change that soon!

I hope your host family is alright. Everyone in Japan and in the other effect areas have been in my prayers. Your whoopie pies look great! I've made them homemade before and while they are a lot of work, it's so worth it. I'm sure they went over really well!

Can you believe I have never tried coconut milk? I have issues, I know. That recipe sounds so so delicious though!! I am totally going to buy some coconut milk and try it!

oo I love bake sales, too! I have that recipe book and have made a couple of their whoopie pies. I'm intrigued by the carrot cake whoopie by but haven't made it yet. I love some of the crazy concoctions it suggests in the book!
