Orange Vanilla Poppy Seed Muffins
I love every pastry at this bakery but by far my most favourite thing are the muffins. Delicious buttery muffins, that aren’t too sweet, and have crunchy tops. My favourite type of muffin is the poppy seed one. I have always loved poppy seeds.
I remember one morning when I was blessed enough to have a fresh muffin still warm from the oven. It was one of my best experiences ever.
Sadly a few months ago this bakery closed without warning. I was depressed by the fact that I will never get to have one of their delectable poppy seed muffins again.
These muffins were made in memory of that bakery. They may not be quite as delicious but you won’t regret eating them.
They’re made with fresh orange juice, orange zest, and vanilla. The combination makes them taste somewhat reminiscent of a creamsicle but I assure you that with the addition of crunchy delightful poppy seeds they are even better.
Vanilla Orange Poppy Seed Muffins
Makes 10
½ cup flour
1 cup whole wheat flour
½ cup sugar
2 tsp baking powder
½ tsp salt
2 tbsp poppy seeds
1/3 cup milk
1/3 cup vegetable oil
½ tbsp orange zest
Juice from half a navel orange
1 tsp vanilla
A few cut up pieces of orange (optional)
Preheat the oven to 400°F
In a large bowl whisk together flour, whole wheat flour, baking powder, salt, and poppy seeds
In another bowl beat together egg, milk, and oil. Add zest, juice, and vanilla then beat until combined
Fold wet ingredients into the dry mixture until just combined. Toss in the orange pieces if using.
Divide batter among muffin tins
Bake muffins for 15-20 minutes until tops are golden brown

I can see why these are your favorite! They look delicious! I love poppyseeds and citrus as well, and made a tart this weekend using both of those things…great minds think alike :)! I don't think I could pick a favorite muffin, there are so many good ones ;)!

I love poppyseed anything. There are some Mennonites close to the house that I grew up getting poppyseed muffins from. They are so delicious. These look wonderful!

I love baking to a certain memory. My favourite muffins would be something that has lotsa of dried fruits, chocolate chips and various nuts in it.I love picking at all these gems while eating a muffin. Your muffin with the poppy seed looks wonderful. I bet they make good breakfast!
