Best Ever Gluten Free Chocolate Chunk Coconut Cookies
I have been searching for the perfect gluten free cookie for a while. I find that usually gluten free baking will have a slight grainy texture or fall apart but… OH.. MY .. GOSH I am so surprised by how these cookies came out. They have the perfect texture and flavor, they don’t taste gluten free at all! I know its almost March but I hope everyone is enjoying the new year so far! A couple years ago I did a gratitude jar. Everyday that year a wrote something on a small piece of paper that made me happy that day. At the end of the year I spent New Year’s Eve reading what I had written. A couple months ago I saw the Dracula Ballet! I know what you’re thinking its either “how can there be a ballet about Dracula?!” or “man that’s so cool, I wish I could see the Dracula Ballet”. It was an amazing show. The dancers were wonderful and the show was something I would have never expected to see in a ballet. There was suspense and horror, cute moments, and special effects. These cookies are the best I’ve ever had! I think I have made at least four batches of these in just a month! And that’s saying something considering I hardly ever make the same recipe twice. Spicy Oatmeal Cookies
Christmas is almost here and you know what that means? Cookies! I can’t wait to bake and sample multiple cookies. For me the quintessential Christmas cookie has to be filled with spices. Of course there’s the traditional gingerbread cookie which is lovely and delicious but I don’t always like to go traditional. This year it feels like Christmas has come too quickly. Moving can be a very stressful and busy time in one’s life. You’re sad to leave your old home but excited to enter another. This is what I have been experiencing as I am currently in the process of moving out of my house and have been busy busy!
